This qualification provides learners with information on preventing contamination, temperature abuse of food and the destruction of bacteria by thorough cooking. The importance of good personal hygiene, cleaning, waste management and recognising and reporting signs of pests are also stressed.

This qualification is ideal for anyone working in the catering and hospitality industry (or those about to start work in the industry).  It forms a good foundation for food handlers.

Content

Subjects covered include:

• an awareness of hazards and controls associated with food in catering operations

• contamination prevention

• temperature abuse of food and the importance of thorough cooking and rapid cooling

• personal hygiene

• cleaning and disinfection.

Assessment:

This qualification is assessed through a 15-question multiple-choice question examination. The duration of the examination is 30 minutes.
